Don't worry, that thing on his tongue is a date (the fruit) in a seaweed costume. It was created by an awesome woman, a food stylist, whose job looks utterly awesome.
Fascinating video, thanks for the link! I had only heard of Janice Poon, the food stylist for Hannibal, but clearly this is an important job to have in the film/tv industry :D
I was also expecting this to be about Janice Poon. She also did the food for the Easter dinner in the season 1 finale of American Gods. (Not sure they needed her skills the rest of the season.) My favorite set of challenges she had with Hannibal, besides trying to get sea urchins very far out of season, was that both (I'm 90% sure I'm remembering correctly that it was these two) Lawrence Fishburn and Gina Torres were vegetarians, so she had to make things that looked like meat that they could eat on screen.
My mother used to make stuffed dates to put into her fruitcake. She's slice into a nice plump sticky date, and shove a whole almond into it, then roll the whole thing in sugar so it wouldn't be too sticky. These would get marinated in assorted kinds of booze, and incorporated with the batter to add texture to the fruitcake. Nothing to do with edible offal.
