the idea of homemade golden syrup is appealing because Tate & Lyle's were huge Brexiters, hmm, this would make it possible to get syrup while not giving them money. 🤔
I use a heaping tablespoonful of golden syrup in with the white sugar when I make caramel. It improves the color and flavor. But homemade caramels don't ship very well.
It's awesome in baking but I tend to not mail baked goods -- they can be fragile in many ways. (I used to send fruitcakes every December for over a decade, though. Good times good times.)

(Add a silica gel packet to the shipping baggie in case of humidity?)
I can definitely send you some (UNUSED!) food grade silica packets if you like. I use them to keep the dry cat food from going stale.
