I haven't done a giveaway in much too long, and I just candied a second batch of quince to confirm an observation I happened upon with the first batch.
So, want a little bag (maybe an ounce, maybe a bit less)? Drop me a comment. Offer valid in the US only because international postage is exorbitant, alas.
Ingredients and conditions of manufacture:
Quince, water, raw sugar, salt, citric acid, lemon peel, cardamom.
Made in a household which keeps kosher but does not separate dishes, and which is not gluten free.
There is a point in cooking fruit candy (jam, jelly, etc) when the boil 'changes' from a water-boiling pattern to full of bubbles and 'thick' and 'syrupy'. (Any experienced fruit preservers have a better description of this change?) If I can cook the quince to that point enough water has been driven out that I don't have to dry the pieces afterwards, so it's ideal. However, this moment happens not very long at all before the whole thing goes up in sticky liquid fire, so it's hard to catch and even harder to photograph.
