Anyway, the cucumber cut looks fascinating so I tried it. Two chopsticks go alongside the cucumber. Cut down to the chopsticks at 1/2 or 1/4 inch intervals. turn the cucumber over. repeat the cuts. The cucumber, especially once salted and drained, will expand into a sort of mesh spiral thing that not only looks pretty but absorbs flavor.
This works best on 1-inch thick mini cucumbers, and it takes a little practice. The cucumber must be turned 180 degrees between the sets of cuts. Less or more and it comes apart into wedge-slice-things.
I decided not to salt the cucumbers because I have found they get too salty, so instead I made the dressing with as little water as possible (citric acid and lime zest instead of vinegar and raw sugar instead of honey) and I hope the cucumber juice hydrates the dressing but doesn't flood it. Cooking is an adventure! We'll see tonight how my salad comes out.

Date: 2025-01-15 05:21 pm (UTC)You can cut that kind of a mesh pattern into many different substances. It's often used to create a mesh top crust for pies, instead of weaving it out of strips of dough. And I've seen paper or wood cut like that.
I don't like cucumbers, but I've seen it done with carrots.
