tHIS is more of a mention and then a set of recipes, but the recipes look both accessible and reasonably recognizeable. The "Johnny Cake" is identitcal to what I know of as fried dumplings (and I've seen them called that name many times before). I admire the cassava crust pizza, hee.

As you probably know, "johnny cakes" is a common New England term for flat patties of cornbread. They would keep while one was traveling, so they became "journey cakes". In Rhode Island they use white cornmeal. I wonder how they'd taste made with BLUE cornmeal.

In my native Ohio, I tended to hear the name retconned as a corruption of “Shawnee cake.”

That makes absolutely perfect sense! The Shawnee lived in close to where the trade center Cahokia was, and they'd have seen many different varieties of corn cooked in various ways. So a round flat "biscuit" of cornmeal might well have been among them.

I learned my cornbread from New England cooks, and I put sugar in it. And when I make it for myself, I use corn oil instead of melted butter, but I do use milk, because water makes it a little too crumbly.
