2) but that is not how I would show someone how to devein a shrimp! I would put it back down on the cutting board and I would use a small paring knife!
3) the way he deveins the shrimp is perfect for an experienced cook who has to get 5 pounds prepared in 20 minutes. A home cook needs to take their time and NOT CUT TOWARDS THEIR HAND.
