For some reason I kind of guessed that all water was about the same age... but I guess that's not how it works.

I *think* they mean "this water has not been in contact with any other water or significantly gone anywhere since [time]" when they're talking about its age. Also, looking more closely at the website, I think I need to find proof this even happened. The cold I have had me pretty zonked this morning.
