I applaud the professionals who had the patience as well as the craft to submit to the judgment of the Eurocentric gatekeepers, for the imprimaturs to open the doors past them to many (and I hope so many more over time) others.

Emma, who runs our local Caribbean eatery learned her cooking from her mum and it is SO good!

Thanks for that article; I missed it in all the hospital stuff. Fascinating. Also now I will finally have time to watch High on the Hog! With my remaining Netflix days.

There are a couple of Caribbean restaurants here; need to revisit!

Caribbean food is fucking good. I grew up in a part of New England with a fairly decent-sized Jamaican, Dominican and Puerto Rican population and got to eat at friends' houses, my Jamaican ex's mom was wary of me until she learned I liked the food and then she tried to feed me to death... and one of the saddest things about living in this part of the Midwest is there are no Caribbean eateries or mom-and-pop stores with ready-made food around here, though I have some recipes gleaned from the Internet over the years.

As I said regarding Juneteenth, the enslaved cook barbecuing a whole pig is just as American as the pilgrim wives dealing with the turkey and venison and boar and clams and corn the Wampanoag brought to the feast. African-american is just one of the many different cultures in our melting pot. So have some pulled pork barbecue with a side of grilled squash on July 4th. Sing "Lift Every Voice And Sing" and "Now That The Buffalo's Gone" and"This Land Is Your Land " and "America The Beautiful" and "Let There Be Peace On Earth". Sing loud, everybody! Be proud of who and what and where you are. Be proud of your ancestral eats. Make sure to think of something you want to sing LOUDLY about.

Hey... sing about food. Everybody eats, and there are so many different kinds of food to sing about - infinite diversity in infinite combinations. "When the moon hits your eye like a big pizza pie, that's amore!"
